This cool climate Tasmanian sparkling is a blend of the premium Champagne varieties, Chardonnay (51%) and Pinot Noir (49%), made using traditional method and aged for three years on lees. The aromas open with orange blossom and lemon zest – fragrant and invigorating – before revealing the minerality of a sea breeze, as the cool afternoon change comes in. The gentle ageing contributes almond shortbread and hint of ripe, creamy brie. In the mouth it is elegant and precise with lively sherbetty acidity.
