Adorable from the get-go. It opens with an expressive bouquet of Granny Smith apple, lemon curd and citrus blossoms. Dense and flavoursome, this sparkling is full of joy and captivates my taste-buds nicely. The mousse on the palate is detailed and creamy in every sip, with quite the fine bead. As it finishes, it showcases brioche, popcorn and nougat complexities. To match I selected, canapés of smoked salmon with marinated feta, served over crusty lavosh and chives topping.  The canapés allow the interactions between the food and the wine to reveal the smoky edge and creaminess of the salmon. Then, the oiliness and granular textures of the feta were cleansed by the juicy fresh pineapple acidity of the bubbles. This is a thrilling expression with rolling sinuous textures across the palate of delicious fruit purity. A real treat for everyone who appreciates fine sparkling wines.
