See Barossa Valley on the label for rosé and normally you’ll get delivered a rich and full-flavoured style – big, food-friendly wines. But this one here is another story entirely as it was fermented with wild yeast in barrel before some barrel aging prior to release with American, French and even Hungarian oak in the mix. They are making a beeline for Provence rosé and have done a solid job of it at a good price.

Pale salmon pink, that barrel work has made for a very elegant, subtle and even delicate rosé. Whatever you do, don’t chill it down too far. Spice, earth, wild strawberry and watermelon aromas are followed by a textural palate with savoury nutty complexity and decent length. It certainly has the feel of a wine that will be better matched with appetisers, such as smoked salmon blinis.
