Whole bunch pressed fruit and into 30% new French oak for 18 months maturation. A core of raspberry compote surrounded by blackberries, mulberry and hawthorn. Freshly varnished cedar, cumin and roasted coffee beans. A hint of porcini mushroom powder and white pepper. Elevated acidity that sweeps through the palate with dusty tannins. It’s punchy and jubilant on its feet with the red fruit being a constant focus throughout the wine. Drink now and will cellar 6-8 years. I’d go for pork chops smothered in a creamy mushroom herb sauce.
