From 80 years old vines, grapes destemmed and cold soaked for 7 days, fermented slowly for 21 days to aid a slow and controlled extraction of tannins. Macerated black and blue berries and violets, stewed rhubarb, incense, grilled bacon with maple syrup. On the palate it’s so thick that you could use a spoon to drink it. Sticky, fat tannins hung strongly on the palate walls. A generous hit of oak spices and macerated fruit close up a wine that is heavy as its container.
