Raspberry and wild strawberries are wrapped in a veil of blackberry and Nyon olive. Distinct and highly perfumed fresh bay leaf leads to white pepper powder. Brown mushroom and woodsy leaf litter linger. Acidity builds and peaks with a hint of mixed berry sorbet. Tannins are fine and dusty. It shows high notes of the cool climate reigns of the Adelaide Hills with a support of older oak and brown spices on the finish. Drink now and will cellar 2-5 years. This is made for tomato based meat stews, do NOT forget the bay leaf, it makes all the difference.
