The Crayeres Vineyard is a devotional project of Xavier Bizot, born in Champagne, now proudly South Australian based and the man behind the celebrated DAOSA Adelaide Hills Sparklings. He has long been enamoured by the Wrattonbully region’s limestone and terra rossa grounds as much as he has about making the finest of “Great Australian Red Blends” of Shiraz and Cabernet – the region and style are a passion-pair. This is a trio of 43% Shiraz, 38% Cabernet Sauvignon and 19% of Cabernet Franc, which after 15 months of maturation in 12% new French barriques and larger format, older foudres, come together as a harmonious style, quite floral and fine crushed minerally to begin, fleshy and berried with a pink and green peppercorn note, crunchy structure and mid-weight palate feel. Let this breathe and decant for a few hours and don’t try to deconstruct into its varietal parts. It’s a wine that offers its own sense of completeness and identity.
