For the Parcellaire range of Zillinger, the fruits are sourced from the coolest parcels of the oldest vineyards, all grown on lime/sandstone soils. This cuvée is a precise example of a cool climate wine. 62% Welschriesling and 38% Chardonnay, sourced from north and north-east facing vineyards, the Chardonnay component was fermented in old Numen barrels and aged under flor for 8 months before being blended a month prior to bottling. The nose immediately takes you to the Jura. There is a sherry-esque expression, raw hazelnuts just beginning to roast, and gingery, but the palate is uber fresh, with ample acidity that lifts the oxidative element. With a taste of salted nuts with candied ginger, this is a mouthful with the Amphora-matured Welshriesling providing flesh. There also is length, spice and minerality. Serve at 14 degrees for optimum pleasure, otherwise if you are looking for more Juraesque acidity, serve it cooler.
