Sourced from the Home vineyard, the average vine age is 35 years old. Fruit is whole bunch pressed to a mixture of French oak barriques and puncheons for wild fermentation. Stored in the same barrels for 11 months. Alluring honeysuckle, jonquil and frangipani blooms. White peach, stonefruit core with lemon balm and glace ginger. A cream cheese middle palate with soft peaks of meringue and vanilla sugar. The 50% of malolactic fermentation really extends the length of flavour,as it curls down your palate. Raw almond and sea spray on the finish. Drinking well now and will cellar up to 8 years onwards. A fitting pairing for a fish pie with flakey pastry.
