Takes me back to Victoria’s alpine hills. A soft wave of sweet liquorice, bay leaf, and choc-coffee. Light on its feet, like most good Aussie Cabernets, with a whisper of native scrub and a charry finish. Long, dry, and savoury. Serve with food — beef ragù wouldn’t go astray.
