A tight-framed, densely packed young Shiraz that delivers some interesting herbal and savoury intrigue. Deep purple-crimson hues. Promotes a textural, savoury warmth rather than the usual upfront, ripe, sweet Barossa fruit which immediately makes it stand out. Blackcurrant and aniseed aromas mix with black olive briny notes, herbs, earth and smoked meats. The role of wild fennel, rosemary, thyme together with a splash of amaro-like bitters across the middle palate is a delight to take in and savour, contributing a touch of herbal charm as well as a long, dry finish. Maturation was in French and American oak for 16 months which sees a neat tannin line in place. All up, Bishop is a Barossa Shiraz that delivers a fair whack of flavour with individual style for a fair price.
