Naturally occurring yeast, a portion of wine is held on skins for 175 days. The philosophy and approach although contrary to traditional style still maintains a sense of Hunter cordiality, here stony blue rock, zested limes and lime pickle shine. The palate is whipped by bright acidity and a touch of lemon curd butter. A hint of juiced ginger, earthy but without the warmth and spice. A slinky wine with some phenolic jazz hands. Drink now with ricotta stuffed fried zucchini. Drink now or aged further for another 8 years.
