Central Victoria has made itself home to exceptional shiraz but cabernet is a different story and the winemakers have to work very hard to make the best of the conditions. This though is a good example showing both good varietal character and also structure for aging with that savoury earthiness the Pyrenees is well known for.

Deeply coloured the wine show layers of concentrated blackcurrant, dried herbs and graphite fruits well matched to cedar oak. The palate is then pure cabernet – juicy acidity and mouth coating tannins all supported by dark berry fruits. It’s a bit young and raw right now so best give it a couple of years to settle and then it will be a good match with slow cooked lamb shanks.
