A clean, dry white with gentle fruit, a little grip and plenty of chewy, bitter pithiness. Sweet lime, apple and star fruit. There’s a quiet little tug-of-war between the plush fruit and the pith. I’m into it. The finish is long and herbal, almost tea-like, with no hard edges. The power builds slowly, then carries in a straight line. You think she’s finished, but she’s still talking. It’s easy to miss if you’re not paying attention, which makes it all the more intriguing. I’d have it with a radicchio salad and something involving preserved lemon. Bitter on bitter. Delicious.
