70% of fruit is de-stemmed with no crushing, 12 months of barrel maturation, bottled unfined and unfiltered. The name redlands is not left to chance here, with savoury opening notes of ironstone and bresaola-like, which speaks loudly of its rich red volcanic light clay soil- red ferrosol. Follows a mix of earthy, fruity and spicy notes of sarsaparilla, beetroot root, juicy blackberries and blueberries, polished leather, vanilla pods, and green peppercorns. The chunky tannins are levigated by the tonic acidity, and, once again, the savouriness and earthiness alternate with a black and blue-shaded fruit medley and a bramble note from the little stems left during fermentation. While it implores to be drunk right now, it has the pedigree to age for a little longer.
