Sourced from one of Tim and Nick Knappstein’s selected Chardonnay vineyards at Kenton Valley in the Adelaide Hills, this drills into a more detailed fruit pick, then further barrel selection as a fine, new release. Part traditional and part wild fermentation involving different yeast flora has resulted here in a wine with quite some internal power and depth, showing roasted cashew, grilled pineapple and buttered wholemeal bread like notes with subtle spice senses such as anise and nutmeg. It’s a rich brew of flavours that work well with more intense poultry dishes with Middle Eastern or Iberian spice marinades.
