Cabernet blends are making a comeback and I am here for it. Especially with cooler climate examples of Cabernet that make perfectly medium-bodied, food-friendly wines, like this example from the Yarra Valley. Made from a blend of Cabernet Sauvignon (61%), Cabernet Franc (23%) and Merlot (15%) from 40 year old vines. The aromas open with boysenberries and violets, a gentle swirl revealing liquorice allsorts and spicy pink peppercorns. A glimpse of the way it will evolve with cellaring is apparent in subtle notes of leaf tobacco and new leather. In the mouth it is supple and medium bodied with bright, juicy cranberries and early-summer cherries. Oak adds a subtle nutmeg spice whilst allowing the fruit to shine through. Bright strawberry acidity ensures that the delicacy and freshness continues on the finish.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne.
