52% Cabernet Franc and 48% Cabernet Sauvignon from the Clairault Vineyard in Wilyabrup. Lightly crushed with a slow controlled extraction and matured in French oak barriques for 15 months and the Cab Franc in larger French oak puncheons. An orchestra of blackberries, wild cherries and dark plums, is carried by cedar, maple and crushed cinnamon quills. There is a pathway of gravel and volcanic rock that weaves its way across the palate, sometimes meeting a thistle or thyme bush. It is poised by some elevated acidity and sits firmly in the medium bodied realms, porcini mushroom powder and cumin are beginning to reveal its savory side. This is drinking very well now, with powdery tannins providing the curves and caress to a palate filled with fruit and spice. However, with careful cellaring this will continue to adapt and expand for a further 6-10 years in the cellar. Serve with a German pork knuckle all to yourself.
