Always with a mindset to think outside the box The Other Wine Co has once again hit it out of the ballpark and into the nether regions. What a way for Matt Large to take centre stage this vintage with the first release of Savagnin and in a 375ml bottle to boot. Cuteness personified. However, instantly try the wine and you’ll be saddened it’s not a larger format. Grown in the Southern Fleurieu to which benefits from cooling sea breezes the wine was fermented in neutral oak to which three separate yeast strains were introduced and aged under flor for 18 months. There is an equilibrium of mustard fruits, preserved lemon rind, glace pineapple held in tension with roasted almond, white miso and curry leaf. It teeters between sunshine on peach cheeks and savoury toasted nuances. Evenly balanced between ripe, refreshing fruit and the detailed elements of umami. It’s a wondrous wine to drink and to ponder. The mind reels at the possibility of pouring alongside various cuisines. I’d go for Flounder swimming in a pool of Hollandaise.
