A sparkling that is showing its age, but in a good way. It is mature, complex and savoury with plenty of secondary development that leads to a wine that is particularly well suited to the table. Copper-rose gold hues. The scent of acacia, dusty earth, undergrowth, macerated cherries, sarsaparilla and Brazil nut reveal a fully mature, expressive sparkling. Tastes of the earth, of mushroom and undergrowth with an attractive nuttiness and exotic marzipan notes that are warm and textural. Not your aperitif style sparkling but definitely could take its place alongside a meal of game or duck.
