Grown on the Collinabbin Vineyard in Victoria’s Heathcote region, this is no shy beast of a Cabernet, weighing in at 14.7%abv and carrying a heap of muscle throughout. Varietal cassis and blackcurrant with a fair deal of cedary oak notes to begin, not surprising given 21% of the barrels in play were new French barriques where the wine gathered and built impressive concentration and density over 12 months. Big, chewy and thick with Cabernet’s varietal tannins, there’s little left to the imagination except for choosing what cut of prime beef to serve in its presence.
