Jilyara Heath Road Cabernet Sauvignon 2021

Share

Apparently Cabernet Sauvignon is staging a comeback in popularity – wines like this one are leading the charge. It’s fragrant and perfumed like top-shelf artisan Turkish delight (no holding back on the rosewater) covered in crisp bittersweet dark chocolate. Black cherries and blackcurrants are supported by lovely vanilla bean and cedar notes from deft oak integration. It’s bright and lively on the palate with a fresh blueberry and blackberry acidity. High levels of tannin promise cellaring will be rewarded, but the fine, chalky texture means that kind of patience is optional. Drink with butter-soft slow-cooked lamb shoulder piled on thick slices of olive sourdough with a crunchy cucumber and fresh mint tzatziki.
