Wild fermented and into 18% new French oak. Backyard lemon skin, yellow apples and cooked quince. A heady mix of sparkler flint and wood ash, with the delights of a savoury spice box. Ground cumin, ginger and fennel seed. There is a wild ride of acidity, steep but gradually so and with controlled driving force. Churned butter creaminesses and a raw cashew nuttiness on the finish. There is something for everyone in this single vineyard release, for those that love Chardonnay you’ll be sure to find what you are looking for and pleasantly surprised by its long flavour palate. Ideal with crumbed and stuffed squid hoods. Drink now or will cellar well, intensifying those powdered spices in the next 3-5 years.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
