Blackberries, lavender and juniper. Davidson plum skin, dried blueberries and mulberry. Licorice root, wet soil, Wood Ear mushroom. A coil of raspberry preserves throughout the aromas too. Oak displays with cedar, dark chocolate and clove. Pepperberry, tobacco and sarsaparilla. The richness of deeply concentrated fruit allows for some significant oak influence and that explodes in a triumph of tannins on the palate. Chewy, moreish and totally addictive. Acidity weaves the structural foundations together and creates a very long flavour length. I don’t care what anyone else says, this is utterly delicious and a remarkably well made wine. It parades that Gippsland Pinot Noir personality that you cannot replicate anywhere else in the world. Drink now and will cellar well for 5-8 years further. A worthy pairing for black truffles or a beautifully made game terrine.
