Non-vintage blend of the three traditional varieties, made méthode traditionelle. Pale cerise, almost rose gold in colour. Tight beading that clumps together. Rose petal, cherry Danish, strawberry hull and strawberry yoghurt leesy depth with a touch of ruby grapefruit citrus.  Carrying a little breadth through the palate and mousse, with a firm biscuity base to support creamy red fruits and a high citrus kick. Tight Tassie acid drive through the finish. Serve with a large plate of tuna tataki.
