Lovely restrained aromas of sea salt over grilled nuts, followed by sea spray, lemon pith, lemon rind, delicate beeswax, and subtle salted pastry dough. There’s a finesse and restraint to the palate, too, which is taut and fine boned. Salted lemon, sea spray, strawberry and lemon rind make way for an integrated brioche complexity. There’s a chalkiness to the finish, which carries the saline appeal in the form of preserved lemon to a long and fresh finish. A fine, complex and complete release.
