A slick but by no means inexpensive oak regime exists here at Hutton. A good thing too because the fruit source is sensational. The 2023 is all peach melba, crystalline pineapple rings and lemon curd tart. A sprinkle of vanilla sugar and raw quince. I love the way the wine leans into its pillowy and generous fruit weight, it’s not lean or mean yet far away from cuddly or overt. It walks the line of power and saturation of flavour. Some crumbly cheesecake biscuit crumb and a touch of curry leaf. It’s a wine built for ageing and also for those that adore the robust and energy of youthful Chardonnay, it’s all here. Serve this with garlic and thyme roast chicken with lots of butter pushed all the way under the skin.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career.
