Mostly destemmed berries with a small proportion of whole bunches around 5%. Open top fermenters for 12 days and pressed to 15% new oak for maturation. Glace cherries, redcurrants on the vine and cranberry juice. A hint of rose and cherry blossom. Cold peach tea and cinnamon dust. A crunch of red apple skin and savoury black tea tannins. There is heft from black plum fruit on the back palate which asserts itself for ageability. There is good detail and persistence here, with a pretty perfume and liveliness. Drink now and will reward with 3-4 years cellaring. A lovely pairing might be pork and fennel sausages.
