Pecorino, not to be confused with the cheese of the same name, is an Italian variety which was so dubbed, allegedly, because vines of this variety grew along the route shepherds used when bringing their sheep down from the mountains. Pecorino tends to have good acidity and is suited to warmer regions, but so far its production in Australia is minuscule. That said, the quality of what we have seen so far would suggest it has a promising future here. The wine undergoes fermentation with natural yeasts. 20% of that is in older oak and the wine then spends ten weeks on lees. A solid straw hue, this is a slightly edgy style with good concentration and a supple texture. The nose reveals notes of stone fruits, dry herbs, crisp pears, bay leaves and even a gentle hint of raspberries. No doubt, it is entirely the power of suggestion, but one wonders if perhaps there isn’t just the tiniest hint of an attractive cheese note as well? An intriguing style which should provide pleasure over the next three to four years.
