Free run juice cold settled for 48 hours. Cool ferment. Lime zest, mandarin and green apple curls. Calamansi lime juice, star fruit and crab apple blossoms. Free flowing natural acidity washes across the palate with vibrant fruit purity. The wine feels unforced and instead expands with lemon and lime citrus and a crunch of delicious Granny Smith apple sweetness, acidity licks at the finish which is bone dry. A hint of chalky sandstone grip and finishing with a hint of fennel. Drink now and will cellar well for 8-15 years or so. A lovely match for a punchy watercress salad with big chunks of goat cheese.
