Sourced from McLaren Vale’s first Pecorino plantings. Star fruit, golden kiwi, Johathon apples and calamansi lime. Bubbling hot honeycomb, thyme blossom and caramelised parsnip. An aroma profile that beguiles and delights but one that you have to peer closely at for its rewards. Baked Madeleine biscuits and kernel. A savoury smoked salt salinity and elevated acidity. The wine has good phenolic grip and finishes bone dry. I am enamoured with this wine, it is detailed and showcases the interesting fruit and textural complexity of Pecorino. Drink now and not too cold. A wine that would be great with chewy pippies or vongole pulled from their shell with toothpicks.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career.
