Paracombe Caretaker Cabernet Sauvignon 2018

From vines, just 425 of them, originally planted in the Adelaide Hills back in the mid-90s, only 390 bottles were made of this flagship Cabernet. The wine spent thirty months maturing in an older French oak hogshead. Purple mauve hue, this is an exquisitely refined style of Cabernet. Elegance with intensity. There are notes of dried herbs, tobacco leaves, blackberries, plums, a hint of bacon fat and mulberries in evidence on the nose. Beautifully structured, this is seamless and with silky tannins. There is bright acidity, wonderful length and surely an exciting future for this wine, which should continue to improve for at least the next ten to fifteen years.

Ken was born and bred in Brisbane, Queensland. He had a non-trendy, perfectly happy childhood, in a family convinced alcohol meant instant condemnation to Hades. But a break fishing on the Great Barrier Reef, and some good wine, started a serious obsession that eventually took over. When not writing, fly-fishing for trout in NZ or bonefish on the flats of Cuba, travelling or smoking cigars, he is no doubt following a variety of sporting teams – the occasionally glorious Queensland Reds rugby, the dysfunctional Washington Redskins, the dodgy Arsenal and especially revels in the world restored to its proper axis with the return of the Ashes to their rightful home.
