Chenin Blanc traditional method. Excitable bead in the glass sings of celebration. Note smells tasty – a baker’s kitchen, just enough autolytic yeasty deliciousness. Crisp minerality too – salt-baked citrus and crushed granite. Savoury tones of dried herbs – and lemon leaf. Framed by a joyful white blossom and lime zest lift. Smells crisp and fresh, like linen sheets hung on a bright summer’s day. Plenty of fine creamy mousse and bright acidity – this is Chenin Blanc, after all! Behind the bubbles though, there is finely layered texture and nice phenolics, and the palate lingers for a solid amount of time. Lemon brioche and crushed oak cake on the palate. Bright and focused with a degree of complexity, a stellar addition to Margaret River’s sparkling scene.
