The cool climate of Coonawarra has managed to coax some remarkably delicate florals from beautifully ripe Cabernet Sauvignon. There’s fragrant violets and rose petals with juicy blueberries showing up initially, before evolving into dense fruits of the forest. With more time in the glass, an inky richness evokes dark chocolate and toasted coconut. The palate reveals more of those vibrant berries against a deliciously savoury backdrop of bramble, blackcurrant leaf and black olives. There’s lovely fine tea leaf tannins and a driven black plum acidity.
