As it settles, the delicate sweetness of Pink Lady apples drift against the citrus tang of lemon and lime zest. Pure finesse in the mouth; tantalisingly silky with a delicate spritz of residual sugar (5g/L) that adds viscosity and balances the acidity. In turn, the bright acidity sweeps away the hint of sweetness, leaving the palate perfectly refreshed. As the talc minerality lingers on the finish, you’ll find yourself reaching for another glass. Pair with yellowfin tuna sashimi, flecked with finger lime pearls.
