Dense, dark, earthy and warm. That’s the snapshot. There is, of course, more to explore. As Pyrenees Cabernet Sauvignon – for many a big attraction of the region despite the incredible popularity of Shiraz – The Redstone delivers plenty of detail and the kind of localised Pyrenees aromatics that sing and help to remind us that Cabernet from this part of the world deserves our attention. Earth, autumn leaf, Australian bush, black fruits and licorice scents mix with warm, toasty woodsy oak. As with all of the Dellys reds, it offers a solid line of fine tannins throughout, driving the fruit and providing a firm foundation for the future. It’s looking smart as a six-year-old, that’s for sure. Black fruits and warm spice offer an inviting palate filled with background earthy notes and a gentle, smoked meat savouriness. It all adds up to one smart wine.
