A very smart expression of Adelaide Hills traditional method sparkling, in this a 65% Chardonnay/35% Pinot Noir combination where the regional fruit expression – Chardonnay’s leading white nectarine and citrus qualities to the fore – is omnipresent even after six years on lees. The complexing result is a subtle autolysis note to begin, appear further as a gastronomic tonic bitters element in the palate. A definite aperitif style, yet still with enough fruit flavour rising in the finish to temper any austerity. Disgorged in March 2024 with a dosage of 4.5gm/l.
