Fruit is sourced from the Bridgeland Vineyard in Karridale. Primary fermentation in stainless steel and aged on lees for 5 months, after second alcoholic fermentation in bottle a further 36 months lees aging is followed. Some deep white florals on the opening of this wine, Freesia, Jonquil and blossoming Jasmine. An orchard of apples meets pomelo citrus and with proofing dough and blonde brownies. There is a harmonious meeting point between the ripeness of Chardonnay fruit and yeast autolysis notes; it is quite a powerfully built wine with some baked quince and honeysuckle on the finish. Dosage levels add to the richness and overall satisfaction. Beautiful drinking on its own but would do wonders with a crispy skinned chicken thigh and white bean mash.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
