The Chardonnay and Pinot Noir for this wine are sourced from the Adelaide Hills and Clare Valley. Interestingly, the base wine spends four years on lees before being tiraged for secondary fermentation. Soft aromas of pear and walnut kick things off followed by green apple, lemon zest with some subtle dough notes emerging with air and adding some complexity. The palate has some citrusy zing elevating the wine’s freshness along with a nice tingling bead. Lemon juice, green apple skin, and pear sit above a glimmer of green almond bitterness with a good lick of citrusy acidity through the finish. This has verve and brightness with some subtly yeasty notes adding dimension. A nice sparkling at $36.
