A very different Sauvignon Blanc, The Paper Nautilus spends 9 months in large format French oak. This gives the wine an elegance and restraint, whilst celebrating premium Marlborough fruit. It has the zesty, herbaceous fragrance of strolling through a lemon grove and the sweet perfume of juicy white nectarines and plump vanilla pods. As it opens in the glass, frangipani and passionfruit blossoms erupt; before being joined by mango and brined Sicilian olives. Remarkably, the intense florals continue on the palate. Cinnamon and nutmeg join the sweet baking spices, with a burst of lemon and lime freshness. Resist the urge to drink this wine icy cold; as the chill dissipates, the seductively silky texture evolves.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne. Stints in hospitality, wineries, retail, sales and marketing filled the next few years while Nicole built her knowledge and searched for the right path. She completed the Wine and Spirits Education Trust (WSET) Diploma in 2016 and became a certified WSET Educator the following year.
