Werkstatt captures the energy and curiosity of Australia’s new wave of winemakers – wines that feel thoughtful, but never take themselves too seriously. Bridget sources the fruit from Rosewhite Vineyard, planted in 1983 and this one of the Alpine Valley’s old-vine sites. Fermentation in neutral puncheons and time in barrel bring extra texture and complexity without stealing the spotlight from the fruit. Discrete at first – green apple, chamomile tea and ginger – before the palate starts to unfurl. Candied orange, baked lime and rosewater emerge, met by laser-like acidity and a streak of mineral zing. Clean, vibrant and quietly complex, with plenty going on beneath the surface. Pass the Mandarin and Jalapeño Kingfish Crudo.
