Good Margaret River Chardonnay is one of the jewels of the Aussie wine industry. And this is a good one. The usual process involves overnight chilling of fruit, whole bunch pressing and racking to French oak, around a 1/3rd new. Fermentation in barrel and then nine months maturation on lees, stirred monthly. A bright but pale straw with flecks of green. Some nutmeg-y oak notes here – the wine is still integrating. Spices, lemons, ginger, lemon grass. A lovely, supple mouthfeel backed by vibrant acidity. Excellent length, the intensity is maintained the entire journey with a hint of the tropicals. This has five to six years ahead of it and it should improve further over that time.
