100% of the best Chardonnay picked and 5+ years on lees. Medium lemon gold. A galaxy of tiny rising bubbles. Broad and expressive nose: candlewax, grapefruit, brioche, daffodil yellow florals, roast hazelnuts, apple skin, honey and roast chicken briny richness. Precise and intense, with power and structure that builds and builds through to a long finish. The richness of the roast nuts and briny roast chicken skin balance an electric and vibrant acid spine before a textural finish. This firmly takes its place in the top tier of Tassie sparkling.
