A little reduction that quickly opens up to savoury red fruit and gamey elements like great quality jamon and porcini mushroom. This is immediately obvious this is Martinborough Pinot Noir fruit and handled with care and attention with parcel selections; everything is in its place. The tannins take grip on the front of the palate and the crunchy acidity carries the flavour for a long finish. So much class. I’d love to drink this with chunks of caramelised speck and well….just the speck thanks.
