The tenth release of the Blanc de Blancs, fruit is grown in the Summertown, Bizot vineyard in the cool reaches of the Piccadilly Valley. Primary fermentation in tank and 3.5 years in bottle prior to disgorgement. A low dosage of 5g/L and a total of 4 years on lees. A finespun wine of white flowers, lotus and crab apple blossoms. White peach and rainier cherries. There is a razor edge to the acidity, not shrill but powerful and driving the citron fruit home. Some subtle chalk and white sandstone minerality. Almond biscotti and shortbread on the finish. This is extremely youthful and only just beginning to reveal its crumbly biscuit and autolysis shades. A lovely wine for drinking now with raw scallop crudo or in another 15 years with some puff pastry onion tarts.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
