This is only the second DAOSA Late Disgorged (LD) Blanc de Blancs produced. The sparkling was aged for 88 months on lees before disgorgement on June 24, this year. Mid-yellow hues. Arrives nicely restrained, intense, with an aroma of white peach, melon, honeysuckle, baked quince, lemon pastille, almond, toast and honey biscuits. It’s a mature flavour, indeed, an amalgam of mature, complex flavours with a lasting nuttiness. But, here’s the thing- it seems younger than the vintage date suggests in large part because the acidity – and the winemaking – helps the sparkling retain a youthful brightness, bounce and life. Super fine texture, gently creamy with a concentrated centre of citrus, grapefruit, peach, brioche and grilled nuts. Fresh, composed and immaculately balanced. The maker suggests it’s good for 25 years cellaring potential. The question is – are you the patient type?
