Whole berry, cool open ferment, hand plunged, pressed, and aged on lees for 10 months in seasoned oak. Old school Shiraz fans will be on board for this wine, but there’s enough lightness and freshness to please those that like a side of delicacy. Pretty fresh petals, purple fruit, a hint of dried meat, red pepper berry, and Szechuan pepper. Tannins are chewy and a little rustic but not overly so and are paired with a fresh lift of acid. The result is a fun Shiraz that isn’t too precious. It’s the corduroy jacket you reach for while the velvet one remains in its dry-cleaning bag, waiting for that next “special occasion”.  A little crushed mint, tarragon, aniseed, and youthful compost season the palate’s juicy pastille core. Charred meat is the natural choice for dinner.
