When it’s Saint Bris!

This is sauvignon blanc from the ultra cool climate of Northern Burgundy – uniquely the only appellation in the region allowed to grow this variety. 

It’s intensely floral – like walking through the long grass of a wildflower sprinkled field, in the height of spring. The fruit is much more restrained compared to its friends in New Zealand. There’s juicy white nectarine, a hint of passionfruit and the herbaceous lift of fig leaf. 

Light-bodied, silky and supple, with a bright lime-juice acidity, this wine calls for lightly grilled whiting fillets anointed with late-harvest extra virgin olive oil.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne.
