Dream Bird Margaret River Pipsqueak Sparkling Chenin Blanc 2023

I’ve tasted a few sparkling Chenin Blancs over the last year and I’m becoming a big fan of them. The Dream Bird shows attractive aromatics of lemon, white flowers and sea spray, with a touch of peach and pastry coming through after a bit of air. These pleasant characters are seen again on the palate, which also has a delightful saltiness to it; it’s probably no surprise that it pairs extremely well with a nice gooey cheese and crusty bread. All in all, this is a lovely sparkling, and hopefully I can convince Kym to produce some with a longer secondary ferment in bottle and a late disgorge, which would make this wine an even more satisfying experience.
