Fruit is from the Schaefer family growers, where vines went into the ground in 2017. Pinot Noir is planted on chocolate volcanic soils at the base of the 1.8ha site. Harvested over two dates, destemmed MV6 clones go into concrete open top fermenter, spontaneous and indigenous yeasts and basket pressed to barriques for elevage. Satsuma plums, pepperberry and rosehip. This has a touch of five spice and goji berries too. A wine that invokes the Asian market, some matcha tea tannins and raw cacao nib bitterness to finish. Red berries are all time and those intrigue lies in wild spice, not of oak but of ground work and ancient soil. Drink now or cellar for 6-8 years. Built for game, fried quail or tea smoked duck.
